Bookie's Brookies is a subsidiary of Zays Signature Creations, LLC, a hospitality business that brings individuals together and enriches their happiness, joy, and laughter, leaving them with everlasting memories through their signature T.O.U.C.H. values. Their specialty is a delicious fusion of fudge brownies and cookies called Brookies. The name was inspired by the founder's nickname, Bookie, given by his grandmother, with whom he used to bake. They pride themselves on delivering high-quality Brookies in various flavors, including vegan/gluten-free options.
Over the past few years, they have gained recognition and collaborated with prominent organizations and public figures. They are committed to community involvement through children's literacy and collaborating with nonprofits that share similar initiatives. They are now expanding with a physical storefront to cater to a larger audience, create job opportunities, and contribute positively to the community.

Xavier, also known as Zay, is the creative force behind Zay’s Signature Creations, embodying the persona of Bookie, The Brookie King of Bookie’s Brookies. With a Bachelor’s Degree in Hospitality Administration from SFASU in 2019, Xavier brings a wealth of knowledge and expertise to the luxury dessert industry.​

With over 7 years of experience in the hospitality sector, including roles in restaurant management and internships with esteemed companies like Pappas Restaurants, Gringo’s, and Marriott International, Xavier founded Zay’s Signature Creations in 2020. This multi-service luxury hospitality company has quickly become synonymous with exceptional experiences and exquisite offerings.

Throughout high school and college, Xavier held several leadership roles, cultivating his passion for inspiring others and fostering a culture of excellence. At just 25 years old, Xavier is a dynamic and visionary leader with plans for global expansion of Zay’s Signature Creations, starting with the renowned Bookie’s Brookies. His drive, dedication, and commitment to value-driven success set him apart as a trailblazer in the industry.
